Beet Smoothie

This simple, healthy 4 ingredient beet smoothie can be made with raw or cooked beets for nutrient-dense drink. Vegan and paleo friendly with no added sweeteners, this beet smoothie is a great way to use up leftover cooked beets.

  • 1 cup peeled, cooked beets red or golden
  • 1/2 cup coconut milk or non-dairy milk of choice
  • 1/2 cup water
  • 1/4 tsp vanilla extract
  • pinch salt


  • Roughly chop beets and add to blender jar.
  • Add all remaining ingredients to the blender.
  • Blend until smooth.
  • Pour into a glass and enjoy!


This is a thick smoothie since whole beets are used. If you prefer a thinner consistency you can use freshly pressed beet juice instead.
