Pumpkin Pie Chia Pudding
Simple and delicious pumpkin pie chia pudding.

Ingredients
  • 1/2 cup water
  • 1/2 cup coconut milk can use almond milk as a substitute
  • 2 tbsp chia seeds
  • 4 whole dates
  • 3 tbsp pumpkin puree
  • 1/4 tsp vanilla powder or extract
  • 1 tsp pumpkin pie spice

  • 1/4 tsp vanilla powder or extract
  • 1 tsp pumpkin pie spice
Pumpkin Pie Chia Pudding
Instructions
  1. Soak dates in coconut milk until soft. About 10 minutes.
  2. While dates are soaking, add chia seeds to water and stir.
  3. Once dates are softened, add the mixture to a blender and blend until the dates are broken down and incorporated into the coconut milk.
  4. Combine chia mixture with coconut milk mixture.
  5. Add pumpkin puree, pumpkin pie spice and vanilla. Stir to get all ingredients incorporated.
  6. Let sit in the fridge to gel. 1 hour to overnight.
  7. Portion into two bowls and enjoy!
Recipe Notes

Using canned pumpkin puree is fine for this recipe. Be sure to read the ingredients on the label - you don't want to use a spiced or sweetened version.
