Chia Pudding
A simple, make ahead chia pudding that is great for breakfast or a snack. Use this basic recipe to build your own varieties of chia pudding.

Ingredients
  • 1cup water
  • 1/4cup chia seeds
  • 1/2cup coconut milkcan use almond milk or any other non-dairy milk preferred
  • 2 – 3tsps date pastealternative sweetener options: 2 tsp honey or maple syrup
  • 1/4tsp vanilla powder or extract
Instructions
  1. Add chia seeds to the water and stir. Let sit to gel, 15 minutes to overnight.
  2. Add all remaining ingredients and stir to combine.
  3. Store in the fridge for up to 3 days.
Recipe Notes

This is a basic chia pudding recipe. Add fruit, fruit puree, nuts, seeds or spices for variety.

For a smoother pudding, blend everything until chia seeds are broken down into a smooth and creamy texture (about 2 minutes).
